It’s that time of year again – time for colds, coughs, sinus infections, flus, and stomach bugs that could strike at any moment. Sick days can often make us lose our appetite and make us sensitive to the foods we eat. This soup recipe is my variation of chicken noodle soup. It’s made with chicken, rice, and a mixture of low-residue vegetables, all of which nourish the body and are easy to digest. This recipe is a quick one to whip up - in just 15 minutes, you’ve got a flavorful, soothing, and comforting bowl of brothy chicken soup.

This salad is light and fresh, and it's one of my favorite ways to enjoy a turkey burger. To make this salad extra 'Greek', you can add some sliced black olives (I'm not a fan of olives so I left them out). A good tip for keeping the salad fresh is to add the dressing right when you're ready to eat, and not while preparing the salad, so that the lettuce doesn't get soggy. If you intend on having leftovers and want to reheat the burgers the next day, slice them up and store them in a container separate from the salad. These burgers taste great cold in the salad too, which makes this a perfect meal to pack for lunch.
My buffalo chicken quesadillas are filling enough to eat as a meal, and versatile enough to serve as an appetizer or snack. I used whole wheat tortillas and shredded cheddar cheese, but feel free to substitute any kind of tortilla, or switch up the flavor with blue cheese, pepper jack cheese, or a Mexican blend cheese.

Ingredients: 1 tablespoon Worcestershire sauce ½ tsp. dried oregano ¼ tsp. dried basil ¼ tsp. paprika ¼ tsp. garlic powder ¼ tsp. onion powder ¼ tsp. black pepper Pinch of cayenne pepper McCormick Grill Mates Low-Sodium Montreal Steak Seasoning Directions: 1. Add the Worcestershire sauce, oregano, basil, paprika, garlic powder, onion powder, black pepper, and cayenne pepper to the ground meat that you will be using for your burgers. 2. Gently mix the seasonings into the meat with a fork or with your hands. 3. Shape the meat into patties, and sprinkle some McCormick Grill Mates Montreal Steak Seasoning on both sides of the patties. These savory little cakes are delicious as an appetizer or a side to dinner. I cooked these on the griddle, which is a much healthier method than frying, and still provides the crispiness you want on the outside. Enjoy them warm with sour cream or yogurt, salsa and/or hot sauce, and freeze any remaining in an air-tight container for a healthy vegetable-filled snack or quick meal.
Fish baked in foil makes a quick and easy weeknight meal. It’s an extremely healthy way to cook and also very flavorful, since the fish and vegetables bake together in their own seasoned juices. In this recipe I used tilapia, but you could just as easily choose cod, halibut, salmon, or any other type of filet of fish that interests you. And if tomatoes aren’t your thing, you can simply replace them with another vegetable, such as zucchini, peppers, broccoli, asparagus, or green beans.
This is my go-to black bean soup recipe. It's so flavorful, a bit spicy, and hearty, packed with vegetables, protein, and fiber. In this recipe, I use medium salsa and a small amount of cayenne pepper to add just the right amount of heat for me. If you like a lot of spice, you can use hot salsa and more cayenne pepper, or alternatively, use mild salsa and just a pinch of cayenne for a less spicy soup. My favorite part about slow cooking soup made with dried beans is that it eliminates the extra step of soaking the beans overnight. Just throw everything into the crockpot, puree, and you're done!
This casserole recipe, made with ground meat, beans, and a sweetened tomato sauce, is one that was given to me years ago from a friend, and I have continued to make it over and over, no matter what season it is. It is especially delicious in the cooler months, and I have included stovetop, oven, and crockpot directions to suit whichever cooking method you prefer.
