This casserole recipe, made with ground meat, beans, and a sweetened tomato sauce, is one that was given to me years ago from a friend, and I have continued to make it over and over, no matter what season it is. It is especially delicious in the cooler months, and I have included stovetop, oven, and crockpot directions to suit whichever cooking method you prefer. Ingredients: 1 medium onion, chopped 1.5 lbs. lean ground beef or lean ground turkey 1 ½ cups of no-salt-added tomato sauce 1 (15 oz.) can pork and beans 1 (15 oz.) can lima beans, drained and rinsed 1 (15 oz.) can dark red kidney beans, drained and rinsed 2 tablespoons Splenda brown sugar (or use 1/4 cup regular brown sugar) 2 tablespoons red wine vinegar ½ teaspoon ground black pepper Stovetop Directions: 1. Coat a Dutch oven with cooking spray, and sauté the onions over medium-high heat until they become translucent. Add the beef, and break up the meat with a wooden spoon, stirring often, 4-5 minutes or until the beef is no longer pink; drain well. 2. Add the remaining ingredients to the pot, stir to combine, turn the heat up to high and bring to a boil; then turn the heat to low, cover with a lid, and simmer for 1 hour, stirring occasionally. During the last 10 minutes of cooking, tilt the lid slightly to allow for some of the steam to escape and for the sauce to thicken up a bit. This is delicious served with a spoonful of low fat sour cream! (See the bottom of page for Oven and Crockpot Directions.) Oven (Baking) Directions:
This method is almost the same as the Stovetop method, but you finish cooking the casserole in the oven instead of simmering on the stovetop. 1. Preheat the oven to 350 degrees. 2. Coat a Dutch oven with cooking spray, and sauté the onions over medium-high heat until they become translucent. Add the beef, and break up the meat with a wooden spoon, stirring often, 4-5 minutes or until the beef is no longer pink; drain well. 3. Add the remaining ingredients to the pot, stir to combine, turn the heat up to high and bring to a boil; then turn the heat off, cover the pot with a lid, and bake in the oven for 1 ½ hours. Crockpot Directions: 1. Coat the inside of a 4-5 qt. (or larger) crockpot with cooking spray. 2. Sauté the onion and ground beef in a skillet for a few minutes to brown the meat. Drain. 3. Place all of the ingredients into the crockpot, and stir to combine. 4. Place the lid on the crockpot, and cook on HIGH for 3-4 hours, or on LOW for 6-8 hours.
