This is my go-to black bean soup recipe. It's so flavorful, a bit spicy, and hearty, packed with vegetables, protein, and fiber. In this recipe, I use medium salsa and a small amount of cayenne pepper to add just the right amount of heat for me. If you like a lot of spice, you can use hot salsa and more cayenne pepper, or alternatively, use mild salsa and just a pinch of cayenne for a less spicy soup. My favorite part about slow cooking soup made with dried beans is that it eliminates the extra step of soaking the beans overnight. Just throw everything into the crockpot, puree, and you're done! Ingredients: 1 lb. dry black beans 4 small cloves garlic, or 2-3 large cloves garlic, minced 1 medium onion, chopped 1 Tbsp. cumin 6 ½ cups of water 1 red bell pepper, diced 1 green bell pepper, diced 1 (16-oz.) jar of your favorite salsa (I used medium salsa) ½ tsp. kosher salt ½ tsp. black pepper ¼ tsp. cayenne pepper Directions: 1. Coat the inside of a 6-7 qt. crockpot with cooking spray. 2. Mince the garlic, and chop the onion. Rinse the dry black beans in a colander under cool running water and pick out any stones or debris. 3. Place the black beans, garlic, onion, and water into the crockpot. Place the lid on, and cook on HIGH for 6 hours, at which point the beans should be nice and soft. 4. Use an immersion blender to blend two-thirds of the soup so that it gets thick and creamy. You can eyeball it, and puree a little bit at a time until 2/3 of the beans are blended, or you can take out 1/3 of the beans using a straining ladle, puree what’s left in the crockpot, and then pour the whole beans back into the pureed mixture. **If you do not have an immersion blender, wait until the soup cools some and then use a blender to purée 2/3 of the soup in batches. 5. Dice the bell peppers, and microwave them on high for 5 minutes. Add the peppers along with the salsa, cumin, salt, black pepper, and cayenne pepper to the crockpot. Stir everything together. Cook on LOW for 30 minutes, and then it’s ready to serve. This soup will be somewhat thick, so if you prefer a thinner soup, just add some water until you reach the desired consistency.
