I feel like meatloaf gets a bad rap. At one point or another, most of us have eaten a slice of dry, bland meatloaf, and for some, that's enough to cause permanent dislike. I, for one, LOVE meatloaf and would go so far as to say it’s one of my favorite foods. It's healthy, versatile, easy to make, and if you think about it, it's basically just a really large burger. I typically follow the same, trusty recipe that I developed years ago for a classic turkey meatloaf, but I also love to add variety with different spices and ingredients. In this Greek-inspired recipe, I’ve added sautéed red onions, spinach, and feta cheese to the turkey to produce a pretty incredible flavor combo. Meatloaf is anything but boring!

There are many different blends out there, and it’s easy to make your own Creole spice mix at home. I’ve played around with the ingredient list many times over the years, adjusting the amount of each spice to find the perfect ratio of seasonings, and this is it! It provides just the right amount of zing and heat, and if you like extreme spice, all you have to do is increase the amount of cayenne pepper. This recipe makes a fair amount of Creole seasoning, so you can store the leftover mix to use in future recipes.
