Prep Time: 5 minutes Cooking Time: 15 minutes Ingredients: 1 lb. boneless, skinless chicken breast 1 cup no-sugar-added apricot preserves 2 Tbsp. onion soup mix Handful of fresh parsley, chopped Seasonings used: Black pepper Thyme Paprika Directions: 1. Season both sides of the chicken with black pepper, thyme, and paprika. Chop up a handful of fresh parsley and set aside. 2. In a large pan, bring the apricot preserves and onion soup mix to a boil over medium-high heat. Once it boils, lower the heat to medium-low, and add the parsley. Author’s Note: I’ve made this dish on the stovetop, in the oven, and in the crockpot – tastes great either way!
