I feel like meatloaf gets a bad rap. At one point or another, most of us have eaten a slice of dry, bland meatloaf, and for some, that's enough to cause permanent dislike. I, for one, LOVE meatloaf and would go so far as to say it’s one of my favorite foods. It's healthy, versatile, easy to make, and if you think about it, it's basically just a really large burger. I typically follow the same, trusty recipe that I developed years ago for a classic turkey meatloaf, but I also love to add variety with different spices and ingredients. In this Greek-inspired recipe, I’ve added sautéed red onions, spinach, and feta cheese to the turkey to produce a pretty incredible flavor combo. Meatloaf is anything but boring! Ingredients: 1 lb. lean ground turkey 1 egg ¼ cup skim milk ¼ cup whole wheat seasoned breadcrumbs (can be substituted with almond flour or coconut flour as a gluten-free option) ¼ tsp black pepper ¼ tsp. paprika ¼ tsp. garlic powder ¼ tsp. dried oregano ¼ tsp. dried basil 1 Tbsp. Worcestershire sauce ½ red onion, diced ½ of a 10 oz. package of frozen chopped spinach, thawed 5 Tbsp. of crumbled feta cheese Directions: 1. Preheat the oven to 375 degrees, and spray a loaf pan with cooking spray. 2. Sauté the red onion and spinach over medium heat for 3-4 minutes. 3. In a small bowl, whisk together the egg, milk, and breadcrumbs. 4. In a large bowl, mix together the ground turkey, paprika, black pepper, garlic powder, oregano, basil, and Worcestershire sauce. Combine lightly with a fork or your hands. 5. Add the breadcrumb mixture, red onion, spinach, and 3 Tbsp. of the feta cheese to the ground turkey, and lightly mix it all together. 6. Take half of the ground turkey mixture, and press it into the loaf pan. Take 1 Tbsp. of feta cheese and sprinkle it over the turkey, gently pressing the cheese into the meat. 7. Repeat with the other half of the ground turkey, molding the meat on top of the first half, pressing with your fingers along the sides of the meatloaf to seal both halves together. Add the remaining 1 Tbsp. of feta cheese to the top of the meatloaf, and press the cheese down gently onto the meat. 8. Bake the meatloaf for 1 hour, or until the internal temperature reaches 165 degrees. 9. Slice the meatloaf, and serve alone, with ketchup, or whip up a quick tzatziki sauce with plain Greek yogurt mixed with a little lemon juice, diced cucumber, and dill seasoning.
