This food hybrid combines two of my all-time favorites - burgers and burritos. SO delicious, and so easy to make. Perfect for lunch, for dinner, or as appetizer platter at your next party. Makes 8 burritos Ingredients: 1 lb. lean ground turkey (or substitute with lean ground beef if you prefer) ½ cup ketchup ¼ cup prepared yellow mustard ½ cup water ½ Tbsp. Worcestershire sauce ¼ tsp. black pepper ¼ tsp. garlic powder 8 whole wheat tortillas (8-inch tortillas) ½ cup reduced-fat shredded cheddar cheese 2 Roma tomatoes, halved lengthwise and sliced Romaine lettuce, chopped Directions: 1. Coat a large skillet with cooking spray, and brown the ground turkey over medium heat. Stir occasionally and break up the turkey until you’re left with crumbled, cooked meat; drain. 2. Add the ketchup, mustard, water, Worcestershire sauce, black pepper, and garlic powder to the ground turkey. Stir, and increase the heat to medium high. When the mixture starts to boil, decrease the heat to low, put a lid on the pan, and simmer for 5 minutes. 3. Fill each tortilla with 1/8 of the meat mixture, 1 Tbsp. of cheese, some lettuce, and a few tomato slices. Roll each tortilla up. If you’re using 8-inch tortillas, you likely won’t be able to tuck in the ends. If you want more of a traditional burrito with the ends secure, you can use a larger tortilla. 4. Heat a grill pan or griddle to medium-high, and sear both sides of the burrito for about 3-4 minutes, starting with the seam-side down until you have nice grill marks on both sides. If the seam unfolds when you flip the burrito over to grill the second side, you can secure it with a toothpick. Enjoy with a side of ketchup or mustard, or a mixture of both!
