Summertime is the season for grilling! Marinating your chicken breast before grilling is the best way to yield flavorful, juicy meat. Just 3 ingredients are all you need to make this delicious, zesty marinade. Ingredients: 1.5 lbs chicken breast tenders (approximately 10 chicken tenders) 1 packet McCormick Grill Mates zesty herb marinade flavor packet 3 Tbsp. apple cider vinegar (or you can substitute white vinegar) 1/3 cup water Fat-free Italian dressing (I use Fat-free Kraft Zesty Italian) Black pepper, to taste Directions: 1. In a bowl, combine the contents of the herb marinade flavor packet with the vinegar and water; whisk to combine. 2. Sprinkle both sides of the chicken tenders with some black pepper. Place the chicken into the bowl with the marinade, seal with plastic wrap, and refrigerate for 30 minutes to 3 hours. 3. When you’re ready to cook, add some cooking spray or oil to the surface of your grill and preheat. (FYI- I’m using an electric griddle, which I’ve sprayed with nonstick grilling cooking spray, and have turned the temperature dial to 350 degrees.) 4. Grill both sides of the chicken until cooked through, or until the internal temperature reaches 165 degrees. Baste with some Italian dressing if the chicken is getting dry. If you see that the chicken is getting too charred, lower your heat setting. (I grilled each side for 7-8 minutes, and turned the temperature down to 300 degrees after flipping the chicken over). 5. Plate your chicken, and drizzle with Italian dressing.
