Shrimp scampi is a dish traditionally made with shrimp in a lemon, garlic, and butter sauce - heavy on the butter. With this dish (or any dish, for that matter), you don't need tons of butter to have tons of flavor. My recipe for shrimp scampi is full of amazing lemon-garlic flavor like the traditional version, but is made much lighter by using a small amount of butter. Instead of serving it over a large plate of pasta, try serving it with a mixture of cooked vegetables, spaghetti squash, or a baked sweet potato.

Chicken rollups are the type of food that dress to impress. They're creative and pretty to look at, yet very easy to prepare. These are stuffed with spinach, mozzarella cheese, and cream cheese, and served with a super simple, light, creamy tomato sauce.
This casserole is a balanced and healthy meal, made with chicken, rice, broccoli, and my homemade cream of celery soup. Condensed soups are convenient, flavorful, and useful when preparing a quick weeknight dinner. On the downside, they're high in salt and artificial preservatives. I use them sometimes, but when I can, I make my own. Making your own condensed soup is actually really easy, and much healthier since it's preservative-free and you control the salt content. The celery soup used in this recipe requires only a few ingredients and takes less than 10 minutes to make.
My buffalo chicken quesadillas are filling enough to eat as a meal, and versatile enough to serve as an appetizer or snack. I used whole wheat tortillas and shredded cheddar cheese, but feel free to substitute any kind of tortilla, or switch up the flavor with blue cheese, pepper jack cheese, or a Mexican blend cheese.
Easy Turkey Salisbury Steaks made with ground turkey and a packet of brown gravy mix for a simple 30 minute meal. All you'll need to make this dinner even better is to serve it with a side of mashed potatoes. Yum.
This casserole recipe, made with ground meat, beans, and a sweetened tomato sauce, is one that was given to me years ago from a friend, and I have continued to make it over and over, no matter what season it is. It is especially delicious in the cooler months, and I have included stovetop, oven, and crockpot directions to suit whichever cooking method you prefer.
Chicken breasts, potatoes, and fresh green beans - make your entire dinner right in the slow cooker!
Poultry lovers – this burger is for you. Ground chicken provides the basis for a juicy, delicious burger, and it takes on the flavors of anything added to it. This burger has sautéed onions, spinach, and some spices mixed directly into the meat, and is topped with cheddar cheese and sautéed mushrooms. I kept this meal low-carb by serving it bun-less. Other alternatives include wrapping the burger in lettuce or cabbage leaves; serving it open faced on one-half of a bun; or sandwiching it between some thin-sliced whole wheat bread or a toasted English muffin.
Marinade packets come in handy when you want a flavorful dish in one easy step. I whipped up a quick garlic, tomato, and basil marinade and used it both to marinate my chicken breast, and serve as a sauce. The chicken is cooked using a ridged cast iron grill pan, which means that this recipe is one that can be made indoors at any time of the year.
