For most of us, vacation is over (sad face) and we have to get ourselves back into the routine of regular weeknight cooking. To ease the transition back to work/school, my first recipe of 2016 is a really simple, one-pot dinner that you can prepare in just 15 minutes.

All the flavor of Buffalo chicken wings is packed into this irresistible, healthy salad, filled with tomatoes, celery, carrots, cucumber, corn, red kidney beans, and cheese.
Chicken Pot Pie Casserole is an easy, no-fuss, comforting meal. It’s especially perfect for the week after Thanksgiving because you can use the leftovers that you already have on hand for this recipe. Substitute the chicken with your leftover turkey; replace the diced potatoes with the sweet potatoes or mashed potatoes you served as your side dish; and swap out the mixed vegetables with your green bean casserole, or with any other vegetables that were on your Thanksgiving table. (*Note: If you do use leftover turkey and potatoes, you can reduce the cooking time from 1 hour down to 20 minutes). And for those of you who are tired of eating Thanksgiving leftovers, prepare this recipe as is!
Chicken rollups are the type of food that dress to impress. They're creative and pretty to look at, yet very easy to prepare. These are stuffed with spinach, mozzarella cheese, and cream cheese, and served with a super simple, light, creamy tomato sauce.
This casserole is a balanced and healthy meal, made with chicken, rice, broccoli, and my homemade cream of celery soup. Condensed soups are convenient, flavorful, and useful when preparing a quick weeknight dinner. On the downside, they're high in salt and artificial preservatives. I use them sometimes, but when I can, I make my own. Making your own condensed soup is actually really easy, and much healthier since it's preservative-free and you control the salt content. The celery soup used in this recipe requires only a few ingredients and takes less than 10 minutes to make.
It’s that time of year again – time for colds, coughs, sinus infections, flus, and stomach bugs that could strike at any moment. Sick days can often make us lose our appetite and make us sensitive to the foods we eat. This soup recipe is my variation of chicken noodle soup. It’s made with chicken, rice, and a mixture of low-residue vegetables, all of which nourish the body and are easy to digest. This recipe is a quick one to whip up - in just 15 minutes, you’ve got a flavorful, soothing, and comforting bowl of brothy chicken soup.
My buffalo chicken quesadillas are filling enough to eat as a meal, and versatile enough to serve as an appetizer or snack. I used whole wheat tortillas and shredded cheddar cheese, but feel free to substitute any kind of tortilla, or switch up the flavor with blue cheese, pepper jack cheese, or a Mexican blend cheese.
Chicken breasts, potatoes, and fresh green beans - make your entire dinner right in the slow cooker!
Poultry lovers – this burger is for you. Ground chicken provides the basis for a juicy, delicious burger, and it takes on the flavors of anything added to it. This burger has sautéed onions, spinach, and some spices mixed directly into the meat, and is topped with cheddar cheese and sautéed mushrooms. I kept this meal low-carb by serving it bun-less. Other alternatives include wrapping the burger in lettuce or cabbage leaves; serving it open faced on one-half of a bun; or sandwiching it between some thin-sliced whole wheat bread or a toasted English muffin.
