A healthier form of pizza! These zucchini pizza bites come together in just 15 minutes with only 3 ingredients and a few seasonings. Ingredients: 1-2 large zucchini, sliced into ¼” rounds A few sprinkles of dried oregano, dried basil, garlic powder, and black pepper A few spoonfuls of your favorite marinara sauce A few handfuls of shredded part skim mozzarella cheese or reduced fat cheddar cheese Directions: 1. Preheat the oven to 350 degrees; line a baking sheet with foil and coat with cooking spray. 2. As you can see, exact measurements are not necessary in this recipe, which is what makes it so easy. Slice the zucchini into rounds, season both sides with some oregano, basil, garlic powder, and black pepper, and place them onto the baking sheet. 3. Spoon some marinara sauce on the top of each zucchini round, and then top with some shredded cheese. I wanted to use mozzarella cheese in this recipe to give it that traditional pizza flavor, but only had cheddar (still yummy). You can really use whatever type of cheese you like or have in the fridge – cooking is all about utilizing and making the most of what you already have on hand. 4. Bake for 15 minutes, until the cheese has melted and the zucchini is tender. Serve immediately.
