Rice and beans is the ultimate meal or side dish with its low food cost, widespread availability, variety, and high nutrient content. The rice in this recipe gets its bright yellow color from Sazón seasoning, which is made up of a flavorful blend of spices including cumin, garlic, turmeric, and Mexican saffron. Ingredients: 1 small onion, diced 2 cloves garlic, minced 1 red bell pepper, diced 1 green bell pepper, diced 1 box of quick-cooking brown rice (I used Uncle Ben's Ready Rice) 1 packet of Sazón seasoning (I used Sazón Goya con azafran) 2 Tbsp. of water 1/8 tsp black pepper ½ of a 15.5-oz. can of dark red kidney beans, drained and rinsed ½ cup frozen peas, thawed Directions: 1. Coat a large pan with cooking spray, and sauté the onions, garlic, and peppers for 4-5 minutes over medium heat, until the vegetables have softened. 2. Add the kidney beans, peas, and black pepper to the vegetables, stir, and cook for 3 minutes. 3. Add the rice, Sazón seasoning, and water to the vegetable mixture. Use a wooden spoon to blend everything together and to break up the rice. Keep stirring and cooking the rice mixture for 3 minutes. 4. Fluff the rice with a fork and serve immediately.
