I haven’t ordered pizza for myself in years because I always have tortillas on hand. These thin crust individual tortilla pizzas are perfect because you can top them with whatever you like, they’re healthier than delivery and frozen pizza, and they take very little time to make, especially if you're making a plain cheese pizza. In this recipe, I used ground turkey to make a meaty pizza that’s full of protein and will keep me feeling fuller longer. Ingredients: 8 (8-inch) whole wheat tortillas 1 lb. lean ground turkey or lean ground beef 1 green pepper, diced 1 small onion, diced 2 cloves garlic, minced ½ teaspoon dried oregano ¼ teaspoon dried basil ¼ teaspoon black pepper 1 cup marinara sauce 2 tablespoons of water ¼ cup of shredded reduced fat cheddar cheese or mozzarella cheese Directions: 1. Preheat the oven to 425 degrees. Line a baking sheet with foil and coat with cooking spray. 2. Coat a large skillet with cooking spray, and sauté the ground turkey (or beef), peppers, onions, and garlic over medium heat until the meat is no longer pink. Drain well. 3. Add the oregano, basil, pepper, marinara sauce, and water to the skillet, and stir to coat the meat and vegetables. Place a lid on the pan, and simmer over low heat for 5-7 minutes. 4. Place the tortillas onto the baking sheet. Top each tortilla with 1/8 of the meat mixture and 1 ½ tablespoons of cheese. Bake for about 12 minutes, or until the cheese has melted and the edges of the tortillas are brown and crispy. Variations
