We've all heard about cake pops, which is an ingenious idea, so why not create a savory pop with taco filling? I brought these taco pops to a holiday party last weekend, and they were completely gone within an hour. Who can resist a taco on a stick? These little appetizers are so easy to make- all you need is crescent dough, taco meat, and a few taco-style fixings like sour cream, salsa, or guacamole to serve on the side. They also make for a fun snack, or you could throw a few of them into a salad to serve as a meal. Makes 30 taco pops Ingredients: 1 lb. lean ground beef ½ red bell pepper, diced ½ green bell pepper, diced 2 packets low sodium taco seasoning 1½ cups water ½ cup shredded cheddar cheese. 2 packages refrigerated reduced-fat crescent rolls 30 lollipop sticks Serve with salsa, sour cream, and/or guacamole Directions: 1. Preheat the oven to 375 degrees. Line two baking sheets with foil and coat them with cooking spray. 2. Brown the ground beef in a greased pan over medium heat for 7-8 minutes; drain, and set the beef aside. Sauté the peppers in the same pan for 5 minutes over medium heat; then add the beef back to the pan. 3. Add the taco seasoning and water, and bring to a boil. Lower the heat and simmer with the lid on for 5-10 minutes, stirring occasionally. Stir in the cheese. Remove the pan from the heat, and let the taco meat cool for at least 20 minutes. (The dough is much easier to handle if the meat is not hot.) 4. Unroll the crescent dough and gently push the edges back together to form one large rectangle. Repeat with the second package of dough. 5. Starting with one sheet of dough, make 2 slices lengthwise, and 4 slices perpendicular to those, which will leave you with 15 squares of equal size. Repeat with the second sheet of dough, and you’ll have 30 squares total. 6. Place about 1 tablespoon of meat onto each square, and bring the corners together to enclose the meat. Gently pull all the edges shut and roll the dough to form a ball. Place all the taco pops onto the baking sheets (15 on each sheet). Bake for 12-15 minutes, or until the dough is golden brown. 7. Let the taco pops cool for a few minutes, and then insert a lollipop stick into each one and serve immediately. Serve with sour cream, salsa, and/or guacamole as dipping sauces. Enjoy!
