One of my favorite ways to enjoy tomato sauce lately has been to mix it with salsa. Paired with meatballs, it's perfect as a side or main dish. Salsa Sauced Turkey Meatballs Ingredients: 1 lb. lean ground turkey Rachel's Meatball Seasoning (click the link for the recipe) ¼ teaspoon cumin ¼ teaspoon chili powder ¼ cup reduced fat shredded cheddar Jack cheese ½ cup salsa ½ cup low sodium marinara sauce (I used Francesco Rinaldi Traditional No Salt Added Marinara Sauce) Directions: 1. Preheat the oven to 375 degrees. Line a baking sheet with foil and coat with cooking spray. 2. In a bowl, combine the ground turkey, my Meatball Seasoning, cumin, chili powder, and cheese, mixing together lightly. Shape into balls, place onto baking sheet, and bake for 20-22 minutes or until cooked through to an internal temperature of 165 degrees. 3. A few minutes before the meatballs are done cooking, mix the salsa and marinara sauce together in a small saucepan and bring the sauce to a simmer over medium-low heat. 4. To serve, pour the sauce over the meatballs and fill half of your plate with veggies, such as Lightly Sauced Carrots and Green Beans, Garlicky Roasted Zucchini, or Greek Yogurt Coleslaw.
