Here is a super easy, quick, and healthy salmon dinner! This took literally two minutes to prep and no time to clean up. When you're really busy and just don't have the time to cook and clean, baking salmon (or any other type of fish or lean protein) with vegetables and herbs in a foil packet is hands down one of the easiest ways to get a healthy and flavorful meal on your plate! Serves 1-2
Ingredients: A handful of mini bell peppers (red, yellow, orange) 6 oz. salmon Freshly ground black pepper Garlic powder Fresh or dried dill 1 lemon, cut into wedges Directions: 1. Preheat the oven or toaster oven (which is what I used because it heats up much faster) to 400 degrees. 2. Slice a few mini bell peppers lengthwise and remove the seeds. 3. Season a 6 oz. piece of salmon with freshly ground black pepper, garlic powder, and fresh or dried dill. 4. Spray a piece of foil with cooking spray, and place the salmon (skin side down) and peppers in the center. Fold the ends together to seal the foil packet and bake for 20-25 minutes, until cooked through. Serve with lemon wedges. Delish!
