Fill your plate with delicious vegetables that are lightly sauced and full of flavor. Lightly Sauced Carrots and Green Beans Ingredients: 8 oz. frozen cut green beans 8 oz. frozen sliced carrots ¼ cup water Pinch of kosher salt Pinch of black pepper For the sauce: ¼ cup condensed fat-free cream of mushroom soup (I used Campbell’s Healthy Request) ½ teaspoon of soy sauce Pinch of black pepper Pinch of thyme Directions: 1. Place the green beans, carrots, and ¼ cup of water in a microwavable dish. Cover and cook on HIGH for 6 minutes. (Temperature cooking times may vary; if the vegetables are not tender after 6 minutes, continue cooking for another few minutes on HIGH.) 2. Season the cooked vegetables with a pinch of salt and pepper. 3. In a small bowl, mix the sauce ingredients together. 4. Pour the sauce over the vegetables, stir, cover and cook on HIGH for about 2 minutes, until heated through. Enjoy!
