This is the most delicious green bean casserole, perfect for serving at holiday get-togethers. What really takes this dish over the top is the homemade French fried onion topping. If you ask me, there's a time and a place for canned French fried onions: never, and on the shelf. These onions are baked in the oven, so crunchy, and so full of flavor, which makes them much tastier and healthier than the store-bought version. Ingredients: To Make The French Fried Onions: 2 onions, thinly sliced 1/4 cup flour 2 tablespoons panko or regular breadcrumbs 1 teaspoon salt Directions: 1. Preheat the oven to 475 degrees. Line a baking sheet with foil and coat with cooking spray. 2. Combine the onions, flour, breadcrumbs and salt in a large bowl. Spread the onions out on the baking sheet, spray some cooking spray over the top of the onions, and bake for 30 minutes, tossing every 10 minutes. If some of the onions get very crisp, almost burnt, towards the end of baking, take them out and keep them aside until all the onions have crisped. To Make The Casserole:
2 lbs. fresh green beans, ends trimmed 12 oz. sliced baby bella or cremini mushrooms 2 (10 oz.) cans fat-free condensed cream of mushroom soup 1 cup water 2 teaspoons soy sauce 1/4 teaspoon black pepper Directions: 1. Preheat the oven to 350 degrees. 2. Bring a large pot of water to a boil, and add the green beans. Cook until tender. Drain. 3. Coat a pan with cooking spray and sauté the mushrooms over medium-low heat for 7-8 minutes. 4. In a saucepan, bring the cans of mushroom soup, water, soy sauce, and black pepper to a simmer over medium heat, whisking together. 4. Coat a 3-qt. casserole dish with cooking spray and add the cooked green beans, mushrooms, mushroom soup mixture, and 1/3 of the French fried onions to the dish. Stir to combine. Bake for 25 minutes, then top with the remaining onions and bake another 5 minutes. Serve immediately.
