My coleslaw recipe uses Greek yogurt to make this a light, fat-free dish, perfect to serve up alongside a burger, or use as the base for a salad. It's so good, I promise you won't miss the mayo. Ingredients:
1 14-16oz. package classic coleslaw mix 1 large red bell pepper, diced For the dressing: 1 6 oz. cup fat free plain Greek yogurt 2 tsp. Dijon mustard 1/4 cup skim milk 1/4 cup apple cider vinegar 2 Tbsp. Splenda 1/4 tsp. kosher salt 1/8 tsp. celery salt 1/8 tsp. dried dill 1/8 tsp. black pepper dash of onion powder dash of paprika Directions: 1. In a large bowl, combine the Greek yogurt, Dijon mustard, and remaining ingredients for the dressing. Use a whisk to stir it all together. 2. Add the coleslaw and red peppers, and use a large spoon to combine. Refrigerate for an hour, or longer for optimal flavor. Enjoy!
