When I made this meal, I really had no plan in mind. All I knew was that I had a package of chicken breast, an opened jar of salsa in the refrigerator, some canned beans in the pantry, a bag of frozen vegetables, and very little time to cook. I decided to throw it all together in the crockpot with some flavorful spices, and it turned out to be really delicious! Often a great dish can be put together with whatever you have on hand, as long as you regularly buy a variety of healthy staples (check out my Kitchen Essentials). With little effort, you can have a healthy homemade meal any night of the week. Read on to check out this recipe! ~Crockpot Fiesta Chicken~ Ingredients: 1 (16-ounce) jar of salsa (I used medium, but you can use mild or hot if you prefer) 2 pounds boneless, skinless chicken breast 1 (15-ounce) can of black beans, rinsed and drained 1 teaspoon chili powder 1 teaspoon cumin ½ teaspoon paprika ½ teaspoon garlic powder ¼ teaspoon onion powder ¼ teaspoon black pepper 1/8 to ¼ teaspoon cayenne pepper 1 (6-ounce) cup of non-fat plain Greek yogurt 16 ounces frozen mixed vegetables (corn, carrots, peas, green beans) A small handful of reduced fat shredded cheddar cheese Directions: 1. Coat a large crockpot with cooking spray, and set to HIGH. 2. Pour the salsa into the crockpot and spread it out over the bottom. Add the chicken, black beans, chili powder, cumin, paprika, garlic powder, onion powder, black pepper, and cayenne pepper, and give a good stir. Cover and cook on HIGH for 3.5 hours. 3. Add the frozen mixed vegetables and Greek yogurt, and gently stir everything to combine. Add a small handful of cheese. Cover and continue to cook another 30 minutes. How easy is that? You can serve this protein-packed meal in a bowl with a dollop of light sour cream, or on top of some leafy greens, or over cooked brown rice. You could also shred the chicken and use this as a filling in whole wheat or corn tortilla wraps. Enjoy!
