I put this into the crockpot this morning, and I'm really looking forward to dinner tonight! I made this dish with skinless chicken breast, red skin potatoes (which are high in potassium), and broccoli (a great source of Vitamin C). My kitchen smells SO good. The best part about this recipe, besides being a balanced meal, is that it took only five minutes to prep, and the crockpot did the rest of the work while I got all of my errands done for the day. ~Crockpot Creamy Chicken and Broccoli~ Ingredients: 1 (10-ounce) can condensed cream of broccoli soup 2 pounds boneless, skinless chicken breast 2 red skin potatoes, cut into large pieces 1 teaspoon oregano 1 teaspoon paprika ¼ teaspoon garlic powder ¼ teaspoon black pepper Small handful of reduced fat shredded cheddar cheese 16 ounces frozen broccoli florets Directions: 1. Coat a large crockpot with cooking spray, and set to HIGH. 2. Pour the cream of broccoli soup into the crockpot and spread it out over the bottom. Add the chicken, potatoes, oregano, paprika, garlic powder, and black pepper. Cover, and cook on HIGH for 3.5 hours. 3. Add a small handful of shredded cheese on top of the chicken, and then add the frozen broccoli florets. Cover and cook for another 30 minutes. That’s it! The chicken will be as soft as butter, and the flavors of this meal taste just as good- if not better- the next day or two, so pack those leftovers for tomorrow’s lunch/dinner, or freeze them for another time.
