Chili is the answer to so many questions: Planning a game-day bash? Cooking an informal dinner for a large group? Need an easy one-pot weeknight meal? There are tons of chili variations, but my favorite is a classic chili with meat and beans in a spicy tomato sauce. This one is my go-to chili recipe, made with lean ground turkey (or ground beef), kidney beans, pinto beans, tomatoes, peppers, onions, garlic, jalapeno, and the perfect blend of spices. I love serving chili buffet-style. Set out some bowls with shredded cheddar cheese, low fat sour cream, chopped fresh cilantro, sliced avocado, sliced olives, chopped green onions, and corn tortillas, and everyone can load up their chili with their favorite toppings. Classic Chili Ingredients: 1 onion, diced 2 garlic cloves, minced 1 jalapeño, seeds removed, minced 1 green bell pepper, seeds removed, diced 1 red bell pepper, seeds removed, diced 1 ½ lbs. 93% lean ground beef or ground turkey 1 (15 oz.) can low sodium crushed tomatoes or no-salt-added tomato sauce 1 (28 oz.) can low sodium diced tomatoes 2 Tablespoons red wine vinegar 1 Tablespoon Worcestershire sauce 1 Tablespoon ground cumin 1 Tablespoon chili powder 1/4 teaspoon cayenne pepper 1/4 teaspoon ground black pepper Pinch of coarse salt 1 (15 oz.) can kidney beans, drained and rinsed 1 (15 oz.) can pinto beans, drained and rinsed (Optional) Garnish with chopped cilantro, shredded cheddar cheese, low fat sour cream, sliced avocado, or chopped green onions Directions: 1. Coat a Dutch oven with cooking spray. Add the onion, garlic, jalapeño, and peppers, and cook over medium-high heat until tender, about 4-5 minutes. Push the vegetables off to one side and add the meat to the pot. Brown the beef (or turkey), stirring often, for another 5-6 minutes. Drain well. 2. Add the remaining ingredients and bring the sauce to a boil. Turn the heat to low, put the lid on, and simmer for 30 minutes. Then tilt the lid a small amount to let some of the steam escape, and continue to simmer for another 30 minutes. This will help to thicken up the chili.
Serving Suggestions- Top with a sprinkle of fresh cilantro, shredded cheddar cheese, and a spoonful of low fat sour cream (pictured below); or try some sliced avocado and chopped green onion. Tip- If you want a very spicy chili, use 1 teaspoon of cayenne pepper. Enjoy!
