This a wonderful, sweet loaf and a great way to use up those overripe bananas. I don't add any butter or oil to this recipe; instead, I use fat free yogurt, applesauce, and a small amount of Splenda to keep this bread moist. The dry ingredients include a combination of all-purpose and whole wheat flour to cut down on the amount of refined carbohydrates and bump up the fiber content. This loaf is seriously good eats, full of banana flavor and made extra special with the addition of chocolate chips. Wet ingredients: 2 bananas, mashed 2 eggs, beaten 1 teaspoon vanilla ½ cup fat free vanilla yogurt (or use plain regular or Greek yogurt, or sour cream) ½ cup applesauce ¼ cup Splenda (or substitute with regular sugar) Dry ingredients: 3/4 cup all-purpose flour 3/4 cup whole wheat flour 1 teaspoon baking soda ½ teaspoon kosher salt 3/4 cup chocolate chips (reserve a few for adding on top) Directions:
1. Preheat the oven to 350 degrees, and spray a loaf pan with cooking spray very well. 2. In one bowl, mix together the wet ingredients, and in a separate bowl mix together the dry ingredients. Then add the dry ingredients to the wet ones, mix together with a spatula, and then add the chocolate chips and stir together. 3. Pour the batter into the loaf pan, dot the top of the loaf with the reserved choc. chips, and bake for 1 hour; test for doneness by inserting a knife into the loaf. Let the loaf cool in the pan for about 15 minutes before slicing.
