This 30-minute meal includes chicken, black beans, green peppers, corn, cilantro, and a spicy tomato sauce made from diced tomatoes and green chiles. ~Chicken with Black Beans, Corn, and Easy Spicy Tomato Sauce~
Ingredients: 1 lb. boneless, skinless chicken breast, cut into cubes, seasoned with chili powder, cumin, paprika, and black pepper 1 small onion, diced 1-2 cloves garlic, minced 1 (10 oz.) can of diced tomatoes and green chiles 1 cup frozen corn 1 green bell pepper, seeded and diced ½ cup black beans, drained and rinsed Pinch of coarse salt and black pepper Handful of cilantro, chopped Directions: 1. Coat a skillet with cooking spray and cook the onions, garlic, and chicken for a few minutes over medium-high heat, until the meat is no longer pink. 2. In a blender or food processor, pulse the diced tomatoes with their liquid until you’re left with a chunky-style tomato sauce. Pour the sauce into the skillet, and bring the liquid to a boil. Reduce heat to low, cover with a lid, and cook for 10 minutes. 3. In a microwaveable dish, cook the frozen corn in ¼ cup water on HIGH for 4 minutes. Add the green peppers and black beans, and cook on HIGH for another 2 minutes. Drain. Add the cilantro, plus a pinch of salt and pepper to taste. Stir to combine. Fill half your plate with the corn, beans, and peppers, and the other ¼ to ½ of the plate with chicken and sauce. Enjoy!
