We’ve all heard the saying, “Breakfast is the most important meal of the day.” It makes sense that we should start our day with food that fills our bellies after a night’s sleep, nourishes our bodies with a variety of nutrients, and gives us the energy to begin our workday. The best breakfast choices are whole-grains, fruits/ vegetables, low-fat dairy, and lean protein. This week is National Breakfast Week, and I’ve got an omelet recipe that includes eggs for lean protein, part-skim mozzarella cheese for low-fat dairy, and tomatoes and broccoli for a serving of vegetables. Add a small glass of 1% or skim milk to complete your dairy serving, and slice of whole wheat toast if you want to get in a serving of grains, and you’ve got yourself a tasty, healthy, balanced breakfast. Serves 1 Ingredients: 2 eggs 1 Tablespoon water A few dashes of kosher salt and black pepper A handful of frozen or fresh cooked broccoli florets A handful of cherry tomatoes, halved 1-2 Tablespoons of part-skim mozzarella cheese Directions: 1. Coat a small skillet generously with cooking spray and set the pan over medium heat. 2. In a small bowl, whisk together the eggs, water, salt and pepper. Pour into the warm skillet. After about 3 minutes, turn the heat to medium-low and gently run a heatproof spatula along the edges of the omelet to loosen them from the sides of the pan. Keep doing this until the bottom of the omelet is no longer stuck to the pan. 4. Once the top of the eggs starts to bubble and most of the surface begins to set, add the cheese, tomatoes, and broccoli to one half of the omelet. 5. Use the spatula to lift up the top half of the omelet (the side without the cheese and veggies) and gently fold it over the cheese-veggie half. 6. At this point, I like to cook the omelet over low heat for another 1-2 minutes on each side to make sure the eggs are completely set and the outside gets light golden brown. When it's time to flip, run the spatula along the bottom of the omelet (to make sure it's not sticking to the pan), and then place your spatula underneath the center of the open-faced side as you flip it over. 7. Slide your omelet onto a plate and enjoy!
