I have a MAJOR sweet tooth. If I could, I would eat chocolate for breakfast, lunch, and dinner. Alas, everything in moderation. When I’m craving Oreos, chocolate cake, or any other dessert generally classified as unhealthy and sugar-laden, I eat one of these cookies. They’re made with only 6 ingredients, and no oil, flour, butter, or added sugar – the delicious sweetness comes from the natural sugar in the bananas. Makes 14 cookies Ingredients: 2 very ripe bananas 1 Tbsp. peanut butter 1/8 tsp. cinnamon 1 ½ cups old-fashioned oats ¼ cup shredded coconut ¼ cup chocolate chips Directions: 1. Preheat the oven to 350 degrees. Line a baking sheet with aluminum foil and coat lightly with cooking spray. 2. In a large bowl, mash the bananas with a fork until no longer lumpy. Add the peanut butter and cinnamon, and stir to combine. 3. Add the oats, coconut, and chocolate chips. Use a spatula or large spoon to mix everything together. The mixture won't be stiff; it will be slightly wet from the bananas. 4. To form the cookies, take 2 Tbsp. of the mixture, shape it into a ball, flatten it with your hands, and place it on the baking sheet. **Tip for easily scooping an exact quantity of 2 Tbsp.: Use a coffee scoop! 5. Place the baking sheet into to the preheated oven, and bake for 25-27 minutes. The cookies should be very lightly browned on the tops and bottoms. Storing: These last for up to 2 weeks in the refrigerator, and they freeze really well. I like to keep a batch of these in the freezer at all times. They defrost within a few hours in the refrigerator, or simply microwave them for 30-45 seconds.
