Two favorite comfort foods – mac & cheese and chili – come together in my incredibly easy, 30-minute, nutritious one pot meal! Instead of white pasta and cheese being the base of this recipe, lean ground turkey, beans, tomato sauce, salsa, and veggies are the star, which makes this Chili Mac great for sneaking extra veggies and lean protein into your diet. ~30-Minute Chili Mac~
Ingredients 1 lb. 93% lean ground turkey 1 small onion, diced 1 garlic clove, minced 1 orange bell pepper, diced Pinch of coarse kosher salt 2 tsp. chili powder ½ tsp. cumin ¼ tsp. black pepper Dash of cayenne pepper 1 (15.5 oz.) can dark red kidney beans, drained and rinsed 1 (15 oz.) can no-salt-added diced tomatoes, drained 1 cup salsa (medium) 2 (8 oz.) cans no-salt-added tomato sauce ¾ cup whole grain rotini pasta, uncooked 1½ cups water Garnished with reduced fat shredded cheddar cheese Directions 1. Coat a 3.25-Qt. pot (or one of similar size) with cooking spray. Brown the ground turkey, onion, garlic, and peppers with a pinch of coarse salt over medium-high heat for 5-7 minutes. Drain. 2. Add all of the remaining ingredients except the cheese. Stir to mix well. 3. Bring to a boil; cover. Simmer on low heat for 15 minutes, stirring once halfway through cooking. 4. Serve the Chili Mac in a bowl and top with a small handful of shredded cheese. Enjoy!
