Chicken rollups are the type of food that dress to impress. They're creative and pretty to look at, yet very easy to prepare. These are stuffed with spinach, mozzarella cheese, and cream cheese, and served with a super simple, light, creamy tomato sauce. Ingredients: 1 lb. thin sliced skinless chicken breast ¼ cup shredded mozzarella cheese ½ of a 10 oz. package of frozen chopped spinach, thawed 3 Tbsp. Neufchatel light cream cheese ½ cup no-salt-added tomato sauce 1 Tbsp. light sour cream 1 tsp. grated Parmesan cheese Seasonings used on the chicken: Black pepper Garlic powder Paprika Directions: 1. Preheat the oven to 375 degrees; coat a baking dish with cooking spray. 2. Season both sides of the chicken with black pepper, garlic powder, and paprika. 3. Starting at one end of the chicken, place 2 tsp. of cream cheese, 2 Tbsp. of spinach, and 1 Tbsp. of mozzarella cheese. Take that end, and gently roll up the chicken. 4. Repeat with each piece of chicken, and place the rollups into the baking dish seam side down. 5. Cover the baking dish with aluminum foil, and bake for 30 minutes. 6. In a small microwaveable dish, whisk together the tomato sauce, sour cream, and parmesan cheese. Microwave on HIGH for one minute.
7. Spoon the sauce over the chicken and serve immediately.
