Shrimp scampi is a dish traditionally made with shrimp in a lemon, garlic, and butter sauce - heavy on the butter. With this dish (or any dish, for that matter), you don't need tons of butter to have tons of flavor. My recipe for shrimp scampi is full of amazing lemon-garlic flavor like the traditional version, but is made much lighter by using a small amount of butter. Instead of serving it over a large plate of pasta, try serving it with a mixture of cooked vegetables, spaghetti squash, or a baked sweet potato.
Fish baked in foil makes a quick and easy weeknight meal. It’s an extremely healthy way to cook and also very flavorful, since the fish and vegetables bake together in their own seasoned juices. In this recipe I used tilapia, but you could just as easily choose cod, halibut, salmon, or any other type of filet of fish that interests you. This recipe makes a fair amount of Creole seasoning, so you can store the leftover mix to use in future recipes.
