This marinated grilled chicken recipe is not only budget friendly, but easy to make and provides enough for leftovers. The marinade is smoky, slightly sweet, and spices up the chicken with the flavors of garlic, onions, and peppers. ~Mesquite Grilled Chicken~
Ingredients 1 (2-3 lb.) package of boneless, skinless chicken thighs Freshly ground black pepper, to taste 1 packet of McCormick Grill Mates Mesquite Marinade ¼ cup plain fat free yogurt (not Greek) 2 tablespoons water Directions 1. Trim the excess fat off of the chicken thighs and season lightly with freshly ground black pepper. Place the chicken into a container or a large sealable plastic bag. 2. In a small bowl, whisk together the contents of the Mesquite marinade packet with the yogurt and water. (**Note: You can substitute the yogurt for oil if you prefer.) 3. Pour the marinade over the chicken and turn to coat. Refrigerate for at least 1 hour. 4. Set your grill or griddle to medium-high heat, or 350 degrees. Brush the griddle with a little oil or coat with cooking spray. Grill each side of the chicken for 8-10 minutes, or until cooked through. **If using a griddle, tent the chicken loosely with aluminum foil while it’s cooking to prevent splatter and to keep the marinade sealed in.
