Quick-cooking ground beef is the perfect ingredient for an easy, fast meal. These quesadillas are filled with beef, cheese, peppers, tomatoes, and taco seasoning. The assembly is no-fuss: Just fold in half, and bake in the oven until crispy. Serve these with your favorite toppings, such as salsa, guacamole, or low-fat sour cream. Ingredients: 1 lb. 93% lean ground beef 2 green bell peppers, diced 1 (10 oz.) can Ro*tel diced tomatoes and green chiles 1 cup reduced-fat shredded cheddar cheese 8 (6-inch) whole wheat tortillas Rachel's homemade taco seasoning: 2 teaspoons ground cumin 1½ teaspoons chili powder ½ teaspoon paprika ½ teaspoon dried oregano ¼ teaspoon garlic powder ¼ teaspoon onion powder ¼ teaspoon black pepper 1/8 to ¼ teaspoon cayenne pepper 1 tablespoon cornstarch ½ cup water Directions: 1. Coat a large skillet with cooking spray, and brown the ground beef over medium heat. Once the beef is partially cooked, add the bell peppers. Stir occasionally and break up the beef until you’re left with crumbled, cooked meat; drain. 2. Add the taco seasonings, cornstarch, water, and tomatoes to the beef and peppers. Stir, and increase the heat to medium high. When the mixture starts to bubble, decrease the heat to low, put a lid on the pan, and simmer for 5-10 minutes. At this time, preheat your oven to 425 degrees, and line a baking sheet with foil and coat with cooking spray. 3. Fill each tortilla with some of the meat mixture and 2 tablespoons of cheese and fold the tortillas in half, pressing gently to flatten them. Arrange the quesadillas on the baking sheet. 4. Bake at 425 degrees for 10-15 minutes, until the tortillas are lightly golden brown. Serve with your favorite toppings, such as salsa, guacamole, or low-fat sour cream. Storing & Freezing: These last in the refrigerator for up to 5 days, and they also freeze very well- just wrap each one individually in plastic wrap, and then wrap in a piece of aluminum foil, and freeze. When you are ready to defrost one, either place into the refrigerator overnight, or unwrap the foil, and place the quesadilla into the microwave and heat on high for about 2-3 minutes.
