Fish baked in foil makes a quick and easy weeknight meal. It’s an extremely healthy way to cook and also very flavorful, since the fish and vegetables bake together in their own seasoned juices. In this recipe I used tilapia, but you could just as easily choose cod, halibut, salmon, or any other type of filet of fish that interests you. And if tomatoes aren’t your thing, you can simply replace them with another vegetable, such as zucchini, peppers, broccoli, asparagus, or green beans. Ingredients: 4 tilapia filets ½ teaspoon black pepper ½ teaspoon garlic powder ½ cup low fat sour cream 1 (0.5 oz.) packet of pesto sauce seasoning mix 3-4 Roma tomatoes, sliced 4 large sheets of aluminum foil Directions: 1. Preheat the oven to 400 degrees. 2. Season both sides of the tilapia with black pepper and garlic powder. Slice the tomatoes. 3. In a small bowl, combine the sour cream and 3 tablespoons of the pesto seasoning. 4. Spray each piece of aluminum foil with some cooking spray, and place a fish filet on the middle of each one. Spread 2 tablespoons of the sour cream and pesto mixture onto each piece of fish, and top with a few tomato slices. 5. Fold the ends of the foil together and close them (seam side up), and place into the oven for 20 minutes, or until the fish flakes easily and is cooked through to an internal temperature of 145 degrees.
