This Greek-Inspired Pasta Salad is a great summer side dish, packed with whole grains, crunchy veggies, tangy feta cheese, and a light dressing. This dish is best served cold, so let it chill in the refrigerator for a few hours to allow the flavors to develop before serving! ~Greek-Inspired Pasta Salad~
Serves 4-6 Ingredients 2 cups of whole wheat rotini pasta, uncooked 1 seedless cucumber, chopped 2 Roma tomatoes, seeded and chopped ½ small red onion, sliced very thin 1 head broccoli, chopped 1/4 cup crumbled feta cheese + extra for garnish ¼ to 1/3 cup fat free Italian dressing (or substitute olive oil and red wine vinegar) Coarse salt and black pepper, to taste Optional- add black olives and fresh herbs, such as parsley or oregano Directions 1. Prepare the pasta by bringing a pot of water to a boil, and cooking the rotini for 8 minutes. Drain, and set aside to cool. 2. Place the chopped broccoli into a microwavable bowl, add a little water to it, cover, and cook on HIGH for about 4 minutes, or until tender. Drain. 3. In a large bowl, combine the pasta, cucumbers, tomatoes, red onion, broccoli, feta cheese, and Italian dressing. Add salt and pepper, to taste. Refrigerate for at least 2-3 hours before serving. Enjoy!
